Coconut panna cotta with cherry jam and chia seeds

One of my favorite desserts, Italian panna cotta, is very easy to prepare.

For two servings we need:

For jam:

  • Fresh frozen cherries - 110 gr. (or any other berries)
  • Sukrin: 1 - 10 gr. (1 tablespoon) or Sukrin - 15 g (1.5 tablespoons)
  • Water - 30 ml.
  • Tea seeds -10 gr. (1 tbsp.)

For mousse:

  • Cream - 200 ml.
  • Gelatin - 10 gr.
  • Water - 60 ml
  • Sukrin: 1 - 15 gr. (1.5 tablespoons) or Sukrin - 20 g (2 tablespoons)
  • Coconut flour - 10 gr. (1 tbsp.)

Make jam. To do this, put thawed berries with liquid in a saucepan with a thick bottom, add sucrin, water, bring to a boil and boil for another 5 minutes.

Then remove from heat, add chia seeds, stir well and leave to cool (jam will thicken)

Soak gelatin in water.

In a saucepan with a thick bottom, pour the cream, sucrin, coconut flour to a boil on the stove, but do not cook. Remove from stove.

Melt the swollen gelatin on the stove or in the microwave and pour into the creamy mass. Mix well.

Pour the creamy mass into the bowls, put in the refrigerator to freeze, as the cream hardens, pour cherry jam with chia on top.

Can be made in layers, for this, pour a little butter cream over the bowls, put in the refrigerator to freeze, then pour a layer of jam and pour the remaining butter on top.

At your discretion, you can decorate with various fresh berries and fruits and sprinkle with sucrine powder.

Proteins - 8.9 g (9.4% kcal) Fats - 35.4 g (80.2% kcal) Carbohydrates - 9.9 g (10.4% kcal)
